Cobia

Cobia are bruisers - they can grow over 6 feet and 100 pounds. Look for them around structure like reefs, wrecks, and buoys in 30-70 feet of water. Spring and early summer is prime time as they migrate and spawn. Sight fishing for cobia is a rush - scan the surface for their distinctive shark-like dorsal fins. They put up an epic fight and taste great too. To target them, I like tossing big bucktail jigs in the 4-8 oz range. Let it sink, then give it some erratic jerks. Cobia will often follow a jig right to the boat before striking. If you see one, don't be shy about making repeated casts. These guys can be stubborn, but persistence pays off. Just be ready when they finally commit - cobia hits are bone-jarring.

Grey Triggerfish

Grey triggerfish are odd-looking critters with leather-like skin and sharp teeth. They're typically 1-2 feet long and under 10 pounds. You'll find them on reefs and hard bottom areas 60-300 feet deep. Spring and fall are good seasons as water temps moderate. Anglers like targeting triggers for their tasty white fillets. These fish are tenacious fighters for their size. To catch them, drop a small hook with squid or cut bait to the bottom. Use just enough weight to hold bottom in the current. Triggers have small mouths, so finesse is key. When you feel the bite, reel fast and steady to set the hook. Once hooked, get them up quick before they dive for cover. For a fun challenge, try sight fishing for them with light tackle over shallow reefs.

Mahi Mahi or Common Dolphinfish

Mahi-mahi light up the water with their electric blue and gold colors. They average 15-30 pounds but can top 80. Find them offshore near weed lines and floating debris. Summer and fall are best as warm currents push in. Mahi are acrobatic fighters, known for spectacular aerial displays when hooked. Their firm white meat is a favorite for grilling. To catch them, troll rigged ballyhoo or squid near the surface. Look for frigate birds working - they'll lead you to the fish. Once you find a school, keep a hooked fish in the water to hold the others close. Toss out live bait or bright jigs to pick them off. Work fast though - mahi don't stay put for long. The action can be non-stop when you get on a hot bite.

Red snapper are prized catches in the Gulf, typically 1-2 feet long and under 10 pounds. You'll find them near structure in deep water, usually 30-600 feet down. They're most active May through October during spawning season. Anglers love targeting these fish for their tasty white meat and strong fighting ability. To land a big one, use heavy weights to get your bait down deep. Live bait like pinfish or squid works great. Watch out though - when hooked, red snapper often make a beeline for cover and can easily tangle your line. For the best eating, keep your catch on ice and cook it simply with just lemon and herbs to let that mild, sweet flavor shine through. If you see fish coming up to your chum slick, try casting a fly - it's a blast when they hit on top.

Scamp grouper are prized for their sweet, white meat. They average 5-15 pounds but can reach 30. Look for them around rocky bottoms and ledges in 60-300 feet of water. Fall and winter are prime as they move to shallower spawning grounds. These grouper put up a stubborn fight, often heading straight for their rocky lairs when hooked. Live bait like pinfish or squid works well. I like to drop a large live bait on a fish finder rig right into likely holes and ledges. Let it sit - scamp can be cautious. When you feel that thump, reel fast and pull hard to turn their head before they reach cover. Keep your drag tight but be ready to give line on those initial runs. Patience and heavy gear are key to landing these tasty bottom dwellers.
